Vegetarian Recipes Around the World
Build a small spread around vegetables, herbs and bright dressings. These eight selected recipes contain no listed meat, fish, fish sauce or animal stock. The yogurt dip includes dairy, so this is a vegetarian collection, not a vegan one. Check packaged ingredients and the full allergen notes for your own dietary needs.

Before you choose
Read the recipe, not only the photograph
Use the measured ingredient list as your guide. Garnishes, sauces and accompaniments can change dietary suitability. Check bread, chips, yogurt and other packaged ingredients for your own requirements.
Vegetarian does not mean vegan or allergen-free
Tzatziki uses dairy. Other dishes include bread, soy sauce or sesame. This selection is not claimed to suit every allergy or dietary practice.
Choose different textures
For a small spread, combine a warm cooked salad, a crisp fresh salad and a dip. Most of these recipes are sides or starters, not complete main meals. Prepare accompaniments separately.

Tomato and Basil Bruschetta
Ripe tomato and fresh basil make a light topping for garlic-rubbed bread. A useful starting point for a sharing platter.
Kitchen tip: Let the measured salt draw juice from the tomato, then leave most loose liquid behind when topping the bread. Assemble immediately before serving.

Sunomono-Style Cucumber Salad
Thin cucumber slices and a rice-vinegar dressing offer a cool contrast to a warm dish. Optional wakame adds another texture.
Kitchen tip: Drain and gently squeeze the cucumber so it does not dilute the dressing. Check soy sauce labels for wheat if relevant; this recipe is not labelled gluten-free.

Chunky Guacamole with Lime
Avocado, lime and finely chopped onion make a chunky dip with optional chilli and tomato. Tortilla chips are included in this ingredient list.
Kitchen tip: Mash with a fork and taste with a chip before adding more salt. Choose plain chips that suit your diet, and refrigerate the dip during any short wait.

Tzatziki Cucumber and Yogurt Dip
A thick yogurt-and-cucumber dip with dill and garlic. It brings a cool, dairy-based element to a vegetable spread.
Kitchen tip: Use thick plain yogurt and squeeze the grated cucumber well. Garlic strengthens during chilling, so start with the small clove listed in the recipe.

Kachumber Cucumber and Tomato Salad
Cucumber, tomato, onion and coriander meet measured lemon juice and cumin. This fresh side contains no oil or dairy in its listed formulation.
Kitchen tip: Use clean equipment for ready-to-eat vegetables and mix just before serving. Lemon juice does not preserve the salad at room temperature.

06 · Spanish · Soup
Spanish-Style Tomato Gazpacho
A chilled tomato soup with cucumber, pepper and a little bread. Its smooth texture offers another way to serve a vegetable-based starter.
Kitchen tip: Allow at least two hours of chilling. Bread means this version is not gluten-free; do not omit it and assume the same texture or yield.

07 · Moroccan · Side dish
Zaalouk-Style Eggplant and Tomato Salad
Roasted eggplant and a reduced tomato base make a softly textured cooked salad. Cumin, paprika, lemon and coriander carry the flavour.
Kitchen tip: Tomato reduction can overlap the eggplant roasting. Keep some texture when mashing; bread is a separate accompaniment, not part of the recipe's yield.

08 · Moroccan · Salad
Moroccan-Style Carrot Salad with Cumin
Tender carrot coins take a lemon-and-cumin dressing while still warm. Serve slightly warm or chilled as a side dish.
Kitchen tip: Cut even pieces and drain thoroughly before dressing. This recipe contains no honey, nuts or cheese garnish; follow its ingredient list rather than adding extras seen in a photograph.

The cookbooks behind the dishes
Explore the country cookbooks behind these dishes. The full books are mixed collections, not vegetarian-only cookbooks; check their previews before choosing.
Cookbooks are paid digital downloads, not physical books. Etsy purchases and DishRoam app access are separate.
Good to know
Why are the Thai omelette and miso soup not included?
The omelette uses fish sauce. The miso soup offers dashi or mushroom stock, and some dashi contains fish. We have kept recipes with those choices outside this vegetarian selection.
Are the linked cookbooks entirely vegetarian?
No. The country cookbooks contain mixed recipe collections, which may include meat and fish. Only the eight recipes selected here were checked for this meat-free grouping.
