At the table
A home-kitchen version.
These esquites-style cups combine warm corn with a light creamy dressing, lime and crumbly cheese. Fresh or plain frozen kernels both work in the listed method.
Cook away the excess pan liquid before adding the dressing. The aim is juicy kernels with a coating, not corn sitting in a deep pool of thin sauce.

Ingredients
Equipment
Wide saucepan; spoon; four serving cups
Allergen notes
Milk, eggs; mustard may be present in mayonnaise
Method
Prepare the corn. Use fresh kernels cut from the cob or plain frozen kernels. Check there are no tough cob fragments. Measure the finishing ingredients and crumble the cheese before cooking.
Warm the kernels. Melt butter in the saucepan over medium heat. Add corn and stir for 2 minutes. Add the measured water, cover and simmer for 5–7 minutes until the corn is tender and thoroughly hot.
Reduce the liquid. Uncover and cook for another 2–4 minutes, stirring, until only a little moisture remains. The corn should stay juicy but not sit in a deep broth, which would thin the creamy finish.
Mix the dressing. Stir mayonnaise, crema or sour cream and lime juice in a small bowl. Start with half the chile powder; different blends can be much hotter or saltier than expected.
Combine. Remove corn from the heat for 2 minutes, then fold in the dressing and most of the cheese. Taste before adding salt because mayonnaise and cheese may provide enough.
Serve. Spoon into four cups and finish with remaining cheese, chile and optional coriander. Serve warm with spoons. Refrigerate leftovers promptly and reheat thoroughly rather than holding creamy corn warm for several hours.
Use doneness checks rather than appearance alone. FoodSafety.gov temperature guidance.
Small details, better results
Before you cook
- Measure the dressing before cooking so the hot corn can be finished promptly.
- Taste before adding salt. Cotija and mayonnaise already contribute seasoning, and a milder cheese changes the balance.
Common questions
Can I use frozen corn?
Yes. The source recipe allows fresh or plain frozen kernels; cook until tender and thoroughly hot as directed.
Does this recipe need cotija cheese?
Cotija or another crumbly cheese is listed. A milder cheese changes the seasoning, so taste before adding extra salt.
